Creamy Asparagus Soup

Spring has Sprung!! Spring time means Asparagus. My in-laws heading to Hawaii for a week means they left me with two big bundles of fresh asparagus! Did you know Asparagus is a member of the lily family? I didn’t either, but it’s true!

Great for your heart, filled with folate, potassium and low [...]

Vegetarian Cassoulet

This is an incredible soup on a cold and rainy day. Because it’s done in the crock pot, effort is minimal. I base mine on the Recipe at All Recipes.com

Because I’m so sensitive to MSG, I make my mushroom broth the night before in the crock pot. I chop up an onion, about [...]

Bruschetta Tilapia

A family favorite, I just realized I hadn’t posted it!

Now, I’m not even remotely Italian, but pretty much everyone loves bruschetta. What’s not to love about tomatoes, garlic and basil??? This is such a simple throw together meal that is light, aromatic and tastes amazing.

4 Tilapia fillets
3-4 tomatoes (depending on size)
4 cloves Garlic chopped
Fresh [...]

Ranch Chicken

This is one of the kids favorite dinners. The very awesome flavor of Ranch Dressing and very moist tender chicken.

1 cup buttermilk **
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 teaspoon dried dill
1 teaspoon dried parsley

Mix together and marinate chicken in it for 2-3 hours.

I put the marinade in a ziplock bag with the chicken [...]

Chicken Tortilla Soup

I was inspired by the Tortilla Soup recipe on All Recipes. I love Tortilla soup, and get it often in restaurants. My family however has wildly different opinions on what constitutes spicy, so I had to come up with something to please everyone.

What I came up with:

2 large bone in chicken [...]

Coconut Crusted Salmon

Today is Father’s Day. We’re actually having our multigen-dad bash NEXT weekend, but I wanted to do something for my husband today. So he had his choice of dinner.

Being the ever helpful soul that he is, I got the response of ” Something light since I have hockey.” At my baleful look, I [...]

Fish Tacos

I’m trying to improve the family diet by incorporating fish twice a week. This is an effort with my son, who is not a fan of fish. So I got to thinking: Let’s face it. Kids love tacos. My kids, if so offered, could eat tacos multiple times a week. So I searched [...]

Mango Salsa

Salsa in my family can mean many things. My 11 year old son and I like salsa that makes sweat pop out on your head, your eyes water and your nose run. You just know germs and skin cells are burning away. My husband, after 22 years knowing my family, can now tolerate [...]

Vegetarian Egg Rolls

My DS11 has a thing for Chinese food. Since I’m sensitive to MSG and salt, I’m not it’s biggest fan. But making home made, I get to control what goes into my food, so I gave egg rolls go.

1 Head cabbage, cored, quartered and sliced.
a ton of mushrooms, coarsely chopped.
2 cans water [...]

Brainy Breakfast

It’s that time again. It comes round every spring, you’d think I’d be on it.

Yep. School testing. Specifically for my 3rd grader, GATE testing.

I’m ashamed to say, breakfast is not my best meal. Despite my knowledge that breakfast is the most important meal of the day, that it sets the tone and foundation for [...]
