This is one of the kids favorite dinners. The very awesome flavor of Ranch Dressing and very moist tender chicken.
1 cup buttermilk **
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 teaspoon dried dill
1 teaspoon dried parsley
Mix together and marinate chicken in it for 2-3 hours.
I put the marinade in a ziplock bag with the chicken parts. Place in the fridge for 2-3 hours. Before my Marivac broke, I’d just use that for 10 minutes.
I grill, on low, 10 minutes a side. The long slow cook keeps the chicken very moist and tender.
We served it with Garlic Potatoes and Steamed Broccoli.
If you happen to have left overs (or hey, make extra on purpose!) it is incredible sliced and cold on a salad or in a wrap.
** for a dairy free version, mix one cup rice/soy/almond milk with one Tablespoon vinegar. Let stand for 5 minutes to replace the buttermilk.
