Garlic Potatoes

Who doesn’t love Garlic Fries??? Well, we all love garlic fries, but can do with out the deep fried goodness on a regular basis. We attempted to find a suitable replacement and came up with this. This combined a family staple with garlic and came up with :

Garlic Potatoes

1 small yellow potato per person (should fit in a fist)
1 large garlic clove per potato. (or more depending on preference and proximity to vampires)
Olive oil

Preheat the oven to 425°F.

Slice the potatoes in to bite sized pieces. Place in glass baking dish.

Chop the garlic dump onto the potatoes.

Add just enough olive oil to mix the potatoes and garlic well. For my family of four its barely 1 Tablespoon.

Bake at 425° for about 45 minutes, or until the potatoes are soft, mixing up once about 1/2 way through.

Great alone or with your favorite dip.
