Southwest Chicken Salad

1 large head lettuce
1 rotisserie chicken worth of chicken
3/4 of a bag of southwest frozen veggies (corn, black beans, pablano chilies, red pepper, onion)
1 avocado
1 small can of sliced black olives
1 cup of diced tomato
a crush of tortilla chips
Shredded Cheddar Cheese

1/2 cup ranch dressing mixed with chili powder and cumin to your preference. ( I make Dairy Free Ranch )

Clean lettuce, rip apart, put in bowl. Toss with Ranch or reserve dressing for side. Remove chicken from bone, put on top of lettuce, defrost and add veggies, sliced avocado, olives and tomatoes. Sprinkle with coarsely crushed tortilla chips and shredded cheddar.

We reserved the dressing due to varying tolerances in spiciness. DD had plain ranch, DS had no dressing, and DH an I ate the “taco ranch”. I added a squeeze of fresh lemon as well.

Technically I made about 3/4 of this recipe. The bowl was scraped clean (2 adults and 2 young kids) and people were looking for more. So I’ll make the recipe as above next time
